Dr. Chris van Tulleken, known for his science programs on the British television channel BBC and expertise in infectious diseases, addressed the ongoing confusion about what constitutes a healthy diet in his recent paper titled “Ultra-processed People.”  “We label foods that harm us as junk food and processed foods that are high in fat, salt and sugar.
We did not have a way to label foods even when the world was gripped by a disease pandemic,” he noted.

He also drew attention to the global scale of the problem, affecting both poor countries and disadvantaged communities in the UK.

He warned of the detrimental effects of a diet saturated with ultra-processed food (UPF).

 “Thus, poor diet, which means eating high and ultra-processed foods (UPF), has supplanted tobacco as the leading cause of early death on planet earth for humans, animals,“ he noted.”,he said.

According to the scientist, this is because the food system produces highly processed foods, which are the leading cause of biodiversity loss, the second leading cause of carbon dioxide emissions and the leading cause of plastic pollution.

His observations also show a dramatic shift in health trends in some countries.

“In countries like Mexico, Colombia and Brazil, obesity was virtually unheard of, and within a decade it became a major public health problem.

Whereas obesity used to be rare, in 10 years everyone will know someone who has undergone an amputation due to type 2 diabetes. The only thing that has changed is the increased consumption of industrially processed foods in the American diet,” said Dr. van Tulleken.
